RECIPE IDEAS FOR YOUR DELICIOUS MUSHROOMS!
- In the frying pan. What could be more delicious than slices of freshly picked mushroom sautéed in the frying pan with a few knobs of butter?! Season with salt and pepper after cooking.
- Grilled To grill them, choose the biggest mushrooms, season with salt and pepper then dip them lightly in oil. Then put them under the grill for about ten minutes. Lay them on a plate and drizzle with a little melted butter mixed with chopped parsley, the juice of a lemon… and a little garlic for the connoisseur!
- Velouté. Why not a delicious home-cooked velouté sauce?… cut up 250gr of mushrooms and brown them in butter. Mix in a tablespoon of flour, and then water down with 1.5l of stock. Leave them to cook for a quarter of an hour then season to taste. Beat together 1 to 2 dl of cream and two egg yolks in a tureen, Mix in the soup little by little and serve immediately. Do not reheat!
- As a starter. A delicious country-style starter that's simple to make: brown 100gr of small mushrooms cut in two in a little butter, add three beaten eggs and a tablespoon of cream while continuing to stir the mixture. Lightly season. When the eggs are creamy, tip them onto the plates and sprinkle with a little chopped parsley. Serve immediately.
- Stuffed. Our recipe for succulent stuffed mushrooms: let some mushrooms grow until they are at least 5cms in diameter. The following quantities are for 500gr of mushrooms. Separate the stems and chop them up with 100gr of ham, 75gr of onions and two cloves of garlic. Garnish with parsley, chervil, chives and sage. Mix two slices of stale bread with 1dl of cream. Heat together in an oiled casserole for a few minutes over a medium flame and season with salt, pepper and paprika, and stir well. Place the tops upside down on a cheese plate after coating them in olive oil. Fill them with the heated mixture and top with a knob of butter. Place In an oven for about 40 minutes at a maximum heat of 180°C. After cooking, sprinkle with mozzarella or gruyere.
