| 1 The cylinder contains compost and mycelium. The oyster mushroom's growing requirements are minimal compared to the Paris mushrooms and chestnut mushrooms. The culture will begin to grow as soon as you pierce a few holes in the cylinder to let in a little air, humidity and light. It is very important that you do not open the cover! Peel off the label and find practical tips and recipes on the reverse. | 2 Pierce five holes in the side with a kitchen knife: Push the blade fully in, give it a quarter turn and pull it out. This creates an opening easily big enough for lovely clusters of mushrooms to grow. | 3 Place the box in a damp, well-ventilated place at a temperature of 15° to 18°C. A minimum of light is necessary. |

| 4 If the place they are in is too dry, put the box in a flat tub containing balls of Argex soaked in water (make sure the box does not come into direct contact with the water). Using a spray or a watering can with a fine rose, you can keep the box damp, but never put water directly into the box, as this will destroy the mycelium. | 5 One to three weeks later, fine clumps of oyster mushrooms will appear. They will not necessarily appear in all the holes. Don't let them grow too big; over 10cm in diameter, they become rubbery in texture. | 6 When you have harvested your mushrooms, cover the holes with adhesive tape and store the box in a cool place (never lower than -5°C) for 2 to 3 weeks.
